Smart Vegetarian Recipe:
 
Vegetarian Hot and Sour Soup

Ingredients:

4 cups Water
2 tbsp Lee Kum Kee Shiitake
Mushroom Powder
5 dried Large shiitake mushrooms
5 tbsp Lee Kum Kee White Vinegar
2 tbsp Cornstarch
1 1/2 tbsp Lee Kum Kee Sesame Oil
3 tbsp Minced peeled fresh ginger
300g Extra firm tofu, cut into small dices
1/2 cup Cellophane noodle, soaked
1 tbsp Lee Kum Kee Premium Soy Sauce
1/2 tsp Dried crushed red pepper
 
 
Pinch of sugar
Method:
  1. Mix water and mushroom powder, and soak mushrooms in broth for
    20 minutes.
  2. Remove mushroom and squeeze dry mushroom from broth. Discard
    mushroom stem and slice them thinly. Reserve broth.
  3. Combine vinegar and cornstarch, stir to blend.

  4. Heat sesame oil in large saucepan over high heat. Add ginger; sauté
    for 30 seconds. Add broth and bring to boil. Add tofu, cellophane noodles, soy sauce, red pepper, sugar and mushrooms.

  5. Reduce heat to medium-low, cover and simmer for 5 minutes. Add cornstarch mixture; stir until slightly thickened, about 1 minute.
